    Fossil & Till was started in 2013 as a project between three friends with the goal of producing unorthodox, naturally made wines in the Finger Lakes. Inspired by natural winemaking from regions like the Loire and Beaujolais, Fossil & Till focuses on a minimalist approach to winemaking: native yeast fermentation, no additions of acids, sugars, or enzymes, little to no fining or filtration, and minimal additions of sulfur.   • Erpacrife, Metodo Classico Dosaggio Zero Rosato | 2016

    The grapes come from a vineyard in Madonna di Como (in Alba village), at 550 meters above sea level. The grapes are harvested one month earlier than the harvest for the production of red wine. Thanks to the light maceration and the richness of tannins that characterize the Nebbiolo grape, the wine is pink in color. No dosage is added to the cuvée at the moment of disgorgement, in order not to alter in any way the originality of the base wine. Bin: 5013

  • Decideret, Lees Is More Apple Sparkling Wine | 2020

    Certified organic. A “field blend” made from apples from Vigmosegaard orchard at Lilleø: Bramley (37%), mixed French cider varieties like Douce Coet, Kermerrien, Binet Rouge (54 %), and a touch of mixed garden apples (9%). The cider varieties, after harvest in 2018 and 12 months of fermentation, were blended with Bramley apples from 2019.   • Auntsfield, Pet Nat Methode Ancestrale | 2020

    This wine pays tribute to David Herd, who established Marlborough’s first commercial vineyard and winery at Auntsfield in the 1870s. Using David’s original vineyard site and specific Muscat Clone, this wine is made by applying the Methode Ancestrale technique, which can be traced to production of the first sparkling wine “Blanquette de Limoux” in 1531. As in the 153o’s, and 1870’s, fermentation with natural yeast is completed in bottle. This vineyard is a mixed bag of vineyards propagated in the 1960’s and has its own character. This is their last white vineyard for picking and takes a couple of months to finish fermentation due to the change in temperature after harvest in the Swartland. Hoë-Steen is their third wine qualifying for the Old Vine Project (OVP) seal, celebrating the block’s fifteenth birthday this year.     Grapes for this wine are grown on two sites high in the cool Adelaide Hills. One is planted with Dijon 114 and 115, and the other Dijon 777 clones, both the sites and the clones are kept separate for the initial fermentation. 100% whole bunches are cold soaked and the different vineyards and clones are fermented separately with wild yeasts in a mix of old and new French oak barriques. During the first three months, the barrels are rolled occasionally and gently hand plunged. After ten months the wine is carefully gravity racked to tanks before being bottled unfined and unfiltered.
