These hot honey buffalo chicken wraps are so crispy and crunchy and delicious! Baked crispy chicken tenders, hot honey buffalo wing sauce, ranch dressing, cheese and crisp romaine all wrapped in a warm tortilla!

I will never turn down a buffalo chicken wrap!

Eddie and I have been super into wraps like these lately. For the last few months, we’ve thrown together some kind of wrap for lunch on a weekend or even a last minute dinner. Which happened often during the holiday season! I’d even go as far to say that they are his favorite thing right now.

We started making them after ordering them from a local restaurant and while they were good… mine were much better. Now, I just make them instead of us ordering!

It’s safe to say that buffalo chicken will always be a favorite flavor for us, but I also love making these with honey mustard or bbq sauce. Something about the crunchy chicken and warm wrap… plus some lettuce for crunch and maybe cheese if you want it. Depending on the season, I might throw in some garden tomatoes too. You can always toss in whatever you like.

I’ve been making these exact buffalo chicken fingers for approximately 13 years. If you’ve followed along here, then you know – my chicken tender recipes are legit! And I’ve been making versions of them since 2009 and they are something we absolutely love. I’d link to them, but every time I pull up a post from 2009 I want to crawl in a hole and never reappear. Horrifying! Happy searching.

The good news is that I’ve perfected the art of the baked-but-crunchy chicken finger. Like super crunchy.

The key is using a wire rack, a mix of different bread crumbs and baking at high heat. Oh and spraying the chicken fingers with olive oil spray before baking. Perfect crunch every time!

I’ve also perfected our favorite buffalo-wing flavor combo! It includes buffalo wing sauce, of course. My go-to is frank’s red hot wing sauce – that is the only one I like to use. For this specific sauce, I added in a dash of honey. It brings a whole hot honey vibe to the wing sauce and it is ridiculously delicious. I don’t always love spicy food, but anything spicy and sweet will get me. Honey + buffalo wing sauce? I want to drizzle it on all the things.

With that sauce, I love a mixture of fresh cilantro, chives and green onions. If it works, I also love some sharp cheddar. But that depends on the recipe. Crumbled blue cheese too. For this one, I use crumbled gorgonzola.

My homemade ranch dressing is ideal for drizzling. It brings everything together and really makes it extra delicious.

Once the chicken is made, preparing the wrap is easy – just use whatever you love. No need for specific measurements. Throw in a handful of lettuce, a sprinkle of cheese, a drizzle of ranch. As much or as little as you like. You can’t go wrong!

Once you have all the ingredients on hand and the chicken fingers made, you can throw these wraps together for a few lunches or dinners! They make for the best leftovers. You can also chop up the chicken for a salad too – we do that often.

These are a favorite forever.

Ingredients

buffalo chicken fingers

  • 1 pound chicken tenders
  • kosher salt and pepper
  • garlic powder
  • 1 cup flour
  • 2 large eggs lightly beaten
  • 3/4 cup panko breadcrumbs
  • ¼ cup seasoned fine breadcrumbs
  • olive oil spray or nonstick spray, coconut oil spray, avocado oil spray, etc
  • ¾ cup buffalo wing sauce
  • 2 tablespoons unsalted butter
  • 1 tablespoon honey or even hot honey!

wraps

  • 4 large burrito-size tortillas, warmed
  • chopped romaine lettuce or spring greens
  • crumbled blue cheese
  • ranch dressing for drizzling

Instructions

  • Preheat the oven to 425 degrees F. Line a baking sheet with a wire rack. Spray the wire rack with nonstick (or olive oil/coconut oil/avocado oil) spray. This is key so the breading sticks to the chicken!

  • Line up 3 bowls or large plates. Put the flour in one, the eggs in the second and stir together both breadcrumbs in the third.

  • Sprinkle the chicken all over with salt, pepper and garlic powder, covering both sides. Dip each piece of chicken in the flour, covering completely. Then dip in the egg, then in the breadcrumb mixture, pressing gently so the crumbs adhere. Place each chicken piece on the sprayed wire rack.

  • Bake the chicken for 12 minutes, then gently flip and bake for 12 to 15 minutes more.

  • While the chicken is baking, mix up the sauce. Combine the buffalo wing sauce, butter and honey in a saucepan. Heat until the butter melts. Whisk it to combine.

  • When the chicken is done, remove it from the oven. Brush it with the wing sauce all over.

  • Now it’s time to build your wrap! Heat the tortilla in the microwave for a few minutes or even the oven for 1 minute. Place a handful of lettuce in the center of the wrap. Top it with 1 or 2 pieces of chicken. Sprinkle on 1 to 2 tablespoons of blue cheese (or you can use cheddar!). Drizzle on 1 to 2 tablespoons of ranch dressing. Fold up the top and the bottom of the tortilla, then rolls the sides in tightly to wrap it up.

  • Serve with extra wing sauce, ranch, carrots, celery and/or chips!
